A busy mama strategy I have for cooking dinners is that on Monday nights I usually cook a pasta dish, on Tuesdays it’s tacos or another Mexican dish and so on. It makes answering the, “What’s for dinner?” question just a tad easier. This particular Monday it was nested fettuccine topped with tomato sauce and roasted garlic chicken.
